Boiled Maple Syrup Frosting

Comments: To prevent sugar from crystallizing all around upper part of double-boiler, lightly brush double-boiler with cold water before using.
Servings: Approximately 4 cups [1 L]
  • 1/4 cup [60 g] sugar
  • 3/4 cup [190 mL] maple syrup
  • 1/8 teaspoon [0.5 mL] cream of tartar
  • 1/8 teaspoon [0.5 mL] salt
  • 1 egg white
  • Into the top part of a double-boiler, mix together sugar, maple syrup, cream of tartar, salt and unbeaten egg white.
  • Transfer over hot boiling water.
  • Using an egg beater, leave mixture to boil, beating vigourously for exactely 7 minutes, before using.
