Broiled Banana Halves

  • 4 bananas
  • Juice of 1 orange
  • Juice of 1/2 a lemon
  • 3 tablespoons [45 mL] brown sugar
  • 1 teaspoon [5 mL] cinnamon
  • 1/4 cup [60 mL] Rum [optional]
  • Grated rind of 1/2 orange
  • Preheat oven broiler.
  • Peel then half each banana lengthwise.
  • Arrange banana halves side-by-side into a buttered baking dish.
  • Pour orange juice and lemon juice all over banana halves.
  • Sprinkle bananas all over with already mixed together brown sugar and cinnamon.
  • Over middle rack of preheated oven, brown banana halves for approximately 10 minutes, until just golden.
  • If desired, flambe bananas with Rum.
  • Serve immediately, garnished with grated orange rind.
