Artificially Sweetened Apple Fresh Strawberry Gelatin

  • 1/4 cup [60 mL] cold water
  • 1 tablespoon [7 g] unflavored gelatin
  • 1/3 cup [80 mL] boiling water
  • 1/2 cup [125 mL] hulled halved fresh strawberries
  • 1/4 teaspoon [1 mL] strawberry extract
  • 2/3 cup [160 mL] dry skimmed milk
  • 8 teaspoons [40 g] powder sweetener
  • 8 to 10 ice cubes
  • 1/2 medium apple
  • 2 whole fresh hulled or not strawberries, to decorate
  • Into a bowl, sprinkle unflavored gelatin over cold water; leave to swell.
  • Then pour in boiling water stirring until gelatin is completely dissolved.
  • Pour gelatin into a blender then add strawberry halves, strawberry extract, dry skimmed milk and sweetener.
  • Blend to mix until light.
  • Add ice cubes, 2 at a time, mixing until completely melted after each addition; pour into a bowl.
  • Peel, core, dice then fold apple dices into mixture.
  • Evenly pour gelatin into 2 dessert cups.
  • Refrigerate until set.
  • Just before serving, decorate each serving with a whole strawberry.
