Baked Mixed Fresh Fruits

  • 1/2 cup [125 mL] blanched whole almonds
    or
    3/4 cup [190 mL] chopped almonds
  • 1/2 cup [125 mL] milk
  • 1/2 cup [125 mL] heavy whipping cream
  • 1/3 cup + 1 tablespoon [90 g] sugar
  • 2 eggs
  • 1/2 a vanilla bean, cut lengthwise
  • 1 tablespoon [15 g] unsalted butter
  • 3/4 cup [190 mL] green apple dices*
  • 1 mango, peeled, seeded and diced
  • 1/2 cup [125 mL] fresh blackberries
  • Icing sugar, to sprinkle [optional]
  • Preheat oven to 400°F [200°C].
  • If using, finely chop whole almonds into a nut grinder or a food processor using the metal blade, being careful not to grind them into a powder.
  • Into a large bowl, mix together milk, chopped nuts, 1/3 cup [75 g] of the sugar and eggs.
  • Using the tip of a knife, grate vanilla bean seeds into a bowl.
  • Using a metal whip, whip mixture until well combined; set aside.
  • *Peel, core and dice green apples.
  • Over medium heat, met unsalted butter into a frying pan.
  • Add then sprinkle green apple dices with remaining 1 tablespoon [15 g] sugar.
  • Fry stirring for 3 to 4 minutes, until just caramelized; remove from heat.
  • Evenly arrange caramelized green apple dices, mongo dices and fresh blackberries into 4 round 5-inch [14-cm] each individual baking dishes.
  • Evenly pour milk mixture over the fruits.
  • Bake fruits in batter into preheated oven until done, for 20 to 25 minutes, until the blade of a knife comes out clean the center.
  • Transfer baking dishes onto wire racks; leave them to cool for at least 30 minutes serving, lukewarm, sprinkled with icing sugar if desired.
