Special Doughnuts

  • Frying oil
  • Approximately 2 tablespoons [30 g] animal fat, for frying
  • 2 cups [280 g] flour
  • 3 teaspoons [15 mL] baking powder
  • 3 eggs
  • 1 cup [250 mL] milk or cream
  • 1 1/2 cups [300 g] sugar
  • Approximately 4 ounces [125 mL] dry gin
  • Pinch of salt
  • Approximately 2 tablespoons [30 g] soft butter
  • 1/2 teaspoon [2.5 mL] warmed-up baking soda [dissolved into just a little warm water]
  • 1 teaspoon [5 mL] vinegar
  • A little cold water
  • Into a deeep-fryer, melt together some frying oil and animal fat.
  • Sift together flour and baking powder; set aside.
  • Beat eggs until light.
  • Mix in milk or cream, sugar, dry gin, salt, soft butter, dissolved baking soda and vinegar.
  • Slowly stir into sifted flour mixture.
  • Mix in a little cold water, to get an easy to roll dough.
  • Cut dough into doughnut shapes.
  • Deep-fry 3 to 4 doughnuts at a time into hot far, until golden on one side.
  • Flip doughnuts over; brown on other side.
  • Repeat with remaining dough.
