Fidele's-Style Doughnuts

  • 10 medium eggs
  • 3 cups [600 g] sugar
  • 1 teaspoon [5 mL] baking soda
  • 3 cups [750 mL] milk
  • Salt, to taste
  • Nutmeg, to taste
  • 8 teaspoons [40 mL] vinegar
  • Vanilla, to taste
  • 6 leveled tablespoons [90 g] margarine
  • 5 teaspoons [25 mL] baking powder
  • Enough all-purpose flour to get a nice dough
  • Oil, for deep-frying
  • Into a food processor, well beat together eggs and sugar.
  • Mix together baking soda and milk; set aside.
  • Add some salt and nutmeg, vinegar, some vanilla and margarine to first mixture; beat well.
  • Pour mixture into a large bowl before mixing in milk mixture.
  • Mix together baking powder and 1 cup [140 g] flour; mix into mixture.
  • Mix in enough flour to get an easy to roll dough.
  • Roll then cut dough into 72 dougnut shapes.
  • Leave to rest onto waxed paper on the counter for 1 hour.
  • Deep-fry doughnuts, a few at a time into really hot oil until golden brown on both sides, turning once.
  • Transfer onto papper toweling to absorb excess oil.
