Doughnut Balls

  • 6 cups [840 g] flour
  • 6 teaspoons [30 mL] baking powder
  • 1 teaspoon [5 mL] salt
  • 2 cups [400 g] sugar
  • Finely grated rind of 1 orange
  • Nutmeg, to taste
  • 2 tablespoons [30 g] butter, melted
  • 2 eggs, beaten
  • 2 cups [500 mL] milk
  • Frying oil
  • Icing sugar
  • Water
  • Well mix together flour, baking powder, salt, sugar, finely grated ornage rind and nutmeg into a large bowl.
  • Make a well in the middle.
  • Into a clean bowl, well mix together melted butter, beaten eggs and milk.
  • Pour in the middle of dry ingredients; well mix together.
  • Refrigerate dough until cold.
  • Into a deep-fryer or a large casserole, preheat some oil until really hot.
  • Being careful not to press to hard, shape cold dough in your hands into balls using 2 tablespoons [30 mL] dough for each ball.
  • Deep-fry, a few at a time into really hot oil, until golden brown.
  • Transfer onto paper toweling and leave to cool until lukewarm.
  • Meanwhile, into a shallow dish, mix together some icing sugar and enough water to get a quite thick paste.
  • Roll cooled doughnut balls into mixture.
