Salsa or Sweet Pepper Stuffed Eggs

  • Eggs
Salsa Filling
  • 1/2 of mashed egg yolks
  • Salsa, to taste
  • Mayonnaise, to taste
  • Dash of cumin
  • Salt and pepper, to taste
Sweet Pepper Filling
  • 1/2 of mashed egg yolks
  • Mayonnaise
  • Finely chopped green onion
  • Finely chopped green or red bell pepper, membranes removed and seeded
  • Tiny canned shrimp, drained then crushed
  • Hard-boil then shell eggs.
  • Cut a thin slice at each end of each egg.
  • Half eggs crosswise.
  • Remove and then mash yolks.
  • Into separate bowls, mix together all salsa and sweet pepper fillings.
  • Fill half of egg whites with salsa filling, the other half with sweet pepper filling.
Salsa Filling
  • Well mix together half of mashed egg yolks, salsa, mayonnaise, cumin, salt and pepper.
Sweet Pepper Filling
  • Well mix together remaining half of mashed egg yolks, mayonnaise, finely chopped green onion and green or red bell pepper, and crushed shrimp.
