Salsa Filling
- 1/2 of mashed egg yolks
- Salsa, to taste
- Mayonnaise, to taste
- Dash of cumin
- Salt and pepper, to taste
Sweet Pepper Filling
- 1/2 of mashed egg yolks
- Mayonnaise
- Finely chopped green onion
- Finely chopped green or red bell pepper, membranes removed and seeded
- Tiny canned shrimp, drained then crushed

- Hard-boil then shell eggs.
- Cut a thin slice at each end of each egg.
- Half eggs crosswise.
- Remove and then mash yolks.
- Into separate bowls, mix together all salsa and sweet pepper fillings.
- Fill half of egg whites with salsa filling, the other half with sweet pepper filling.
Salsa Filling
- Well mix together half of mashed egg yolks, salsa, mayonnaise, cumin, salt and pepper.
Sweet Pepper Filling
- Well mix together remaining half of mashed egg yolks, mayonnaise, finely chopped green onion and green or red bell pepper, and crushed shrimp.
