Scandinavian-Style Stuffed Eggs

  • 12 hard-boiled eggs, halved
  • 4 tablespoons [60 mL] mayonnaise
  • 1 tablespoon [15 mL] lemon juice
  • 1/2 teaspoon [2.5 mL] dill
  • 2 tablespoons [30 mL] caviar
  • 6 slices smoked salmon, chopped
  • 4 green onions, chopped
  • Salt and pepper
  • Caviar [to decorate]
  • Half hard-boiled eggs.
  • Scoop out yolks from egg halves; transfer yolks into a bowl.
  • Reserve halved egg whites.
  • Into a bowl, mix together mayonnaise, lemon juice, dill, caviar, chopped smoked salmon and green onions.
  • Mix well, pressing with a fork.
  • Season to taste with salt and pepper; mix well.
  • Stuff egg white halves with mixture; decorate with a little caviar.
  • Arrange all 24 egg halves onto a serging plate.
  • Serve immediately or refrigerate until ready to serve.
