Mexican-Style Omelet

  • 1 sweet green or red pepper
  • 2 medium-size onions
  • 3 tablespoons [45 mL] olive oil
  • 1 clove garlic, finely minced
  • 1 cup [250 mL] freshly peeled tomatoes, diced
  • 8 eggs
  • Salt and pepper, to taste
  • Seed and dice sweet pepper; finely chop onions.
  • Heat olive oil into a frypan.
  • Brown together finely minced garlic, chopped onions, tomato dices and sweet pepper dices.
  • Beat eggs; salt and pepper.
  • Pour eggs into frypan.
  • Cook until set.
  • Serve hot.
