- 1 sweet green or red pepper
- 2 medium-size onions
- 3 tablespoons [45 mL] olive oil
- 1 clove garlic, finely minced
- 1 cup [250 mL] freshly peeled tomatoes, diced
- 8 eggs
- Salt and pepper, to taste

- Seed and dice sweet pepper; finely chop onions.
- Heat olive oil into a frypan.
- Brown together finely minced garlic, chopped onions, tomato dices and sweet pepper dices.
- Beat eggs; salt and pepper.
- Pour eggs into frypan.
- Cook until set.
- Serve hot.
