Fresh Mushroom Omelet

  • 6 eggs
  • 1 clove garlic, finely minced
  • 1 onion, finely minced
  • 1 green onion, thinly sliced
  • 3/4 pound [340 g] fresh mushrooms, cleaned and cut into pieces
  • Salt and pepper, to taste
  • Beat eggs; set aside.
  • Into a frypan, brown together minced garlic and onion and green onion slices until golden brown.
  • Add and brown mushroom pieces, then pour in beaten eggs.
  • Cook for approximately 5 minutes, over low heat.
