- 3 English muffins, halved
- 6 eggs
- 6 thin slices ham, cut to fit the size of the English muffins
- Paprika
Hollandaise Sauce
- 3 egg yolks
- 1 tablespoon [15 mL] lemon juice
- Pinch Cayenne pepper
- 1/2 cup [115 g] butter

- Prepare Hollandaise sauce.
- Toast muffin halves.
- Poach eggs.
- Arrange 1 slice of ham over each English muffin half.
- Top with poached eggs, then coat with Hollandaise sauce.
- Sprinkle with paprika.
- Serve immediately, really hot.
Hollandaise Sauce
- Transfer egg yolks, lemon juice and Cayenne pepper into a food processor.
- Cover and mix, using on/off motion.
- Melt butter until boiling.
- Food processor motor running at high speed, slowly pour melted butter into egg mixture.
- Mix for approximately 30 seconds, until thickened.
