Eggs Benedict

  • 3 English muffins, halved
  • 6 eggs
  • 6 thin slices ham, cut to fit the size of the English muffins
  • Paprika
Hollandaise Sauce
  • 3 egg yolks
  • 1 tablespoon [15 mL] lemon juice
  • Pinch Cayenne pepper
  • 1/2 cup [115 g] butter
  • Prepare Hollandaise sauce.
  • Toast muffin halves.
  • Poach eggs.
  • Arrange 1 slice of ham over each English muffin half.
  • Top with poached eggs, then coat with Hollandaise sauce.
  • Sprinkle with paprika.
  • Serve immediately, really hot.
Hollandaise Sauce
  • Transfer egg yolks, lemon juice and Cayenne pepper into a food processor.
  • Cover and mix, using on/off motion.
  • Melt butter until boiling.
  • Food processor motor running at high speed, slowly pour melted butter into egg mixture.
  • Mix for approximately 30 seconds, until thickened.
