Oven-Baked Zucchini Omelet

  • 1/2 cup [125 mL] oil
  • 4 eggs
  • 1 cup [140 g] flour
  • 1 tablespoon [15 mL] baking powder
  • 1/2 cup [115 g] grated Parmesan cheese
  • 2 tablespoons [30 mL] chopped parsley
  • Salt and pepper, to taste
  • Marjoram, to taste
  • 1 clove garlic, crushed
  • 4 cups [1 L] grated zucchini
  • Beat together oil, eggs, flour, baking powder, grated Parmesan cheese, chopped parsley, salt, pepper, marjoram, crushed garlic and grated zucchini.
  • Pour mixture into a greased 8-inch [20-cm] square pan.
  • Bake into a preheated 350°F [180°C] oven, for 1 hour.
