Newport Eggs

  • 14 cooked bacon slices, chopped
  • 8 to 10 hard-boiled eggs
  • 1 [10 ounces / 284 mL] can cream of mushroom
  • 1/2 cup [125 mL] mayonnaise
  • 1/2 cup [125 mL] milk
  • 1/4 cup [60 mL] sweet green pepper dices
  • 1/4 cup [60 mL] minced green onion
  • Salt and pepper to taste
  • English muffins or toasts
  • Mix together chopped bacon, broken into pieces eggs, cream of mushroom, mayonnaise, milk, sweet green pepper dices, green onion, salt and pepper.
  • Bake in a 350°F [180°C] oven for 30 minutes.
  • Serve over Engils muffins or toasts.
