Cheese Spinach Pie

  • 1 basic pie shell
  • 1/2 pound [227 g] grated Mozzarella cheese
  • 1/2 cup [125 mL] chopped spinach or more
  • 1/2 cup [125 mL] heavy cream [15% m.s.g.]
  • 1/2 cup [125 mL] milk
  • 2 eggs
  • 1/4 teaspoon [1 mL] basil
  • 1/4 teaspoon [1 mL] oregano
  • 1/4 teaspoon [1 mL] paprika
  • 1/4 teaspoon [1 mL] tarragon
  • 1/2 teaspoon [2.5 mL] salt
  • 1/2 cup [125 mL] croutons, heated for 10 minutes
  • Line a pie plate with pastry shell.
  • Sprinkle all over with grated cheese, then with chopped spinach.
  • Into a bowl, beat together cream, milk, eggs, basil, oregano, paprika, tarragon and salt.
  • Pour all over spinach.
  • Sprinkle with warm croutons.
  • Bake into a preheated 425°F [220°C] oven for 15 minutes.
  • Lower oven temperature to 325°F [160°C].
  • Bake for 15 minutes more.
