- 1 basic pie shell
- 1/2 pound [227 g] grated Mozzarella cheese
- 1/2 cup [125 mL] chopped spinach or more
- 1/2 cup [125 mL] heavy cream [15% m.s.g.]
- 1/2 cup [125 mL] milk
- 2 eggs
- 1/4 teaspoon [1 mL] basil
- 1/4 teaspoon [1 mL] oregano
- 1/4 teaspoon [1 mL] paprika
- 1/4 teaspoon [1 mL] tarragon
- 1/2 teaspoon [2.5 mL] salt
- 1/2 cup [125 mL] croutons, heated for 10 minutes

- Line a pie plate with pastry shell.
- Sprinkle all over with grated cheese, then with chopped spinach.
- Into a bowl, beat together cream, milk, eggs, basil, oregano, paprika, tarragon and salt.
- Pour all over spinach.
- Sprinkle with warm croutons.
- Bake into a preheated 425°F [220°C] oven for 15 minutes.
- Lower oven temperature to 325°F [160°C].
- Bake for 15 minutes more.
