- 8 slices crusty bread
- 2 tablespoons [30 g] butter
- 2 tablespoons [17.5 g] flour
- 2 cups [500 mL] warm milk
- Onion salt, to taste
- Celery pepper, to taste
- 8 hard-boiled eggs, shelled and sliced or cut into 4 wedges
- 4 green onions [green part only], finely minced
- Freshly grated Parmesan or Cheddar cheese

- Toast, butter and cut bread slices into triangles.
- Into a medium-size saucepan, melt butter over medium heat.
- Blend in flour; cook for 2 minutes, stirring.
- Pour in warm milk; cook, stirring, until thickened.
- Season to taste with onion salt and celery pepper.
- Delicately mix in egg slices or wedges and minced green onions.
- Arrange bread triangles onto 4 individual plates.
- Pour egg sauce over bread triangles.
- Serve immediately, sprinkled with grated Parmesan or Cheddar cheese.
