Hard-Boiled Eggs Dressed with White Sauce

  • 8 slices crusty bread
  • 2 tablespoons [30 g] butter
  • 2 tablespoons [17.5 g] flour
  • 2 cups [500 mL] warm milk
  • Onion salt, to taste
  • Celery pepper, to taste
  • 8 hard-boiled eggs, shelled and sliced or cut into 4 wedges
  • 4 green onions [green part only], finely minced
  • Freshly grated Parmesan or Cheddar cheese
  • Toast, butter and cut bread slices into triangles.
  • Into a medium-size saucepan, melt butter over medium heat.
  • Blend in flour; cook for 2 minutes, stirring.
  • Pour in warm milk; cook, stirring, until thickened.
  • Season to taste with onion salt and celery pepper.
  • Delicately mix in egg slices or wedges and minced green onions.
  • Arrange bread triangles onto 4 individual plates.
  • Pour egg sauce over bread triangles.
  • Serve immediately, sprinkled with grated Parmesan or Cheddar cheese.
