- 1/4 pound [113 g] salt pork
- Boiling water
- 2 cups [500 mL] milk
- 1/4 teaspoon [1 mL] baking soda
- 3/4 cup [105 g] all-purpose flour
- Salt and pepper
- 6 eggs
- Maple syrup

- Preheat oven to 400°F [200°C].
- Cut away salted pork rind.
- Slice salted pork.
- Cover the bottom of a large oven-proof skillet with salted pork slices.
- Cover slices with boiling water.
- Simmer for 5 minutes; drain.
- Brown salted pork until golden brown; keep warm.
- Dissolve baking soda in milk.
- Mix in flour, salt and pepper.
- Beat dough with an electric mixer until smooth.
- Beat eggs until fluffy.
- Beat eggs into dough.
- Pour dough over warm browned salted pork slices, in skillet.
- Bake in oven for 25 minutes, until the blade of a knife comes out clean from the center of the omelet.
- Cut into wedges.
- Serve immediately, with maple syrup.
