Salt Pork Omelet

  • 1/4 pound [113 g] salt pork
  • Boiling water
  • 2 cups [500 mL] milk
  • 1/4 teaspoon [1 mL] baking soda
  • 3/4 cup [105 g] all-purpose flour
  • Salt and pepper
  • 6 eggs
  • Maple syrup
  • Preheat oven to 400°F [200°C].
  • Cut away salted pork rind.
  • Slice salted pork.
  • Cover the bottom of a large oven-proof skillet with salted pork slices.
  • Cover slices with boiling water.
  • Simmer for 5 minutes; drain.
  • Brown salted pork until golden brown; keep warm.
  • Dissolve baking soda in milk.
  • Mix in flour, salt and pepper.
  • Beat dough with an electric mixer until smooth.
  • Beat eggs until fluffy.
  • Beat eggs into dough.
  • Pour dough over warm browned salted pork slices, in skillet.
  • Bake in oven for 25 minutes, until the blade of a knife comes out clean from the center of the omelet.
  • Cut into wedges.
  • Serve immediately, with maple syrup.
