- 2 [9-inch / 23-cm] pie shells
- 1/2 pound [227 g] Canadian-style bacon [or thinly sliced ham]
- 8 eggs
- 3 tablespoons [45 mL] green onions, chives or onion, finely chopped
- 1/2 teaspoon [2.5 mL] salt
- 1/4 teaspoon [1 mL] pepper
- 1 tablespoon [15 mL] water or milk

- Line a quiche dish with 1 pie shell; arrange half bacon or ham slices all over.
- Delicately break seven [7] eggs into quiche dish.
- Pierce egg yolks with a fork [do not mix egg yolks with egg whites].
- Sprinkle all over with chopped green onions, chives or onion; salt and pepper.
- Garnish with remaining bacon or ham slices.
- Top with remaining pie shell.
- Beat remaining egg together with water or milk; brush pie with mixture.
- Bake into a preheated 400°F [200°C] oven for 30 to 40 minutes.
- Serve warm or cold.
