Rolled Eggs

  • 4 eggs
  • 1/4 cup [60 mL] milk
  • Salt and pepper to taste
  • 1 teaspoon [5 g] margarine
  • 1 green onion, minced
  • 1/4 green or red bell pepper, chopped
  • 2 slices cooked ham, diced
  • 4 slices double-bran cereal bread
  • 1/2 cup [115 g] grated Cheddar cheese
  • 1 tablespoon [15 mL] melted butter
  • Cucumber
  • Fresh parsley
  • Into a bowl, mix eggs with milk; season with salt and pepper.
  • Reserve.
  • Into a frypan, melt margarine; sweat green onion, ham and green or red bell pepper.
  • Pour in egg mixture; cook for 1 to 2 minutes on each side, or to desired consistency.
  • Cool; reserve.
  • On a chopping board, flatten bread slices.
  • Garnish slices with egg mixture; sprinkle with cheese.
  • Roll.
  • Arrange rolls on a cookie sheet; brush with melted butter; refrigerate until ready to bake.
  • Bake into a 375°F [190°C] oven for 10 to 12 minutes.
  • Slice 1/2-inch [1.3 cm] thick.
  • Arrange each slice on a slice of cucumber.
  • Serve garnished with parsley.
