- 4 eggs
- 1/4 cup [60 mL] milk
- Salt and pepper to taste
- 1 teaspoon [5 g] margarine
- 1 green onion, minced
- 1/4 green or red bell pepper, chopped
- 2 slices cooked ham, diced
- 4 slices double-bran cereal bread
- 1/2 cup [115 g] grated Cheddar cheese
- 1 tablespoon [15 mL] melted butter
- Cucumber
- Fresh parsley

- Into a bowl, mix eggs with milk; season with salt and pepper.
- Reserve.
- Into a frypan, melt margarine; sweat green onion, ham and green or red bell pepper.
- Pour in egg mixture; cook for 1 to 2 minutes on each side, or to desired consistency.
- Cool; reserve.
- On a chopping board, flatten bread slices.
- Garnish slices with egg mixture; sprinkle with cheese.
- Roll.
- Arrange rolls on a cookie sheet; brush with melted butter; refrigerate until ready to bake.
- Bake into a 375°F [190°C] oven for 10 to 12 minutes.
- Slice 1/2-inch [1.3 cm] thick.
- Arrange each slice on a slice of cucumber.
- Serve garnished with parsley.
