French Canadian-Style Oven-Baked Omelet

  • 1 tablespoon [15 g] butter
  • 2 cups [500 mL] boiled potato cubes
  • 1/2 teaspoon [2.5 mL] celery salt
  • 3/4 cup [190 mL] sliced mushrooms
  • 1 onion, chopped
  • 1/2 cup [125 mL] chopped sweet green pepper
  • 1/3 cup [80 mL] cooked ham dices
  • 5 eggs
  • 1/2 cup [125 mL] milk
  • Pinch pepper
  • 1 cup [225 g] grated Cheddar cheese
  • 3 slices crunchy bacon, crumbled
  • Preheat oven to 325°F [160°C].
  • Melt butter into a frypan.
  • Brown potato cubes for aproximately 3 minutes over high heat; season with celery salt.
  • Arrange potato cubes into a 9-inch [23-cm] pie plate.
  • Top with mushroom slices, then with chopped onion and green pepper and finally with ham dices.
  • Into a bowl, beat together eggs and milk.
  • Season with pepper.
  • Pour into pie plate.
  • Bake into preheated oven for 30 to 35 minutes.
  • Serve, sprinkled with grated cheese and bacon crumbs.
