- 1 onion, minced
- 1 clove garlic, minced
- 1 tablespoon [15 g] butter
- 1 [10-ounce / 284-g] bag fresh spinach leaves
- 8 ounces [227 g] ham slices
- 8 ounces [227 g] grated Mozzarellla cheese
- 2 tomatoes, sliced
- 4 beaten eggs
- 1 unbaked pastry shell

- Preheat oven to 400°F [200°C].
- Brown together minced onion and garlic into melted butter.
- Boil spinach leaves into salted boiling water until soft.
- Drain spinach leaves and mix in browned onion/garlic mixture.
- Arrange ham slices into a 9-inch [23-cm] baking dish.
- Top with grated Mozzarella cheese, then with spinach mixture and finally with tomato slices.
- Pour beaten eggs all over.
- Cover with pastry shell; cut in slits.
- Bake into preheated oven, for 35 to 40 minutes.
