Mediterranean-Style Pie

  • 1 onion, minced
  • 1 clove garlic, minced
  • 1 tablespoon [15 g] butter
  • 1 [10-ounce / 284-g] bag fresh spinach leaves
  • 8 ounces [227 g] ham slices
  • 8 ounces [227 g] grated Mozzarellla cheese
  • 2 tomatoes, sliced
  • 4 beaten eggs
  • 1 unbaked pastry shell
  • Preheat oven to 400°F [200°C].
  • Brown together minced onion and garlic into melted butter.
  • Boil spinach leaves into salted boiling water until soft.
  • Drain spinach leaves and mix in browned onion/garlic mixture.
  • Arrange ham slices into a 9-inch [23-cm] baking dish.
  • Top with grated Mozzarella cheese, then with spinach mixture and finally with tomato slices.
  • Pour beaten eggs all over.
  • Cover with pastry shell; cut in slits.
  • Bake into preheated oven, for 35 to 40 minutes.
