  • Shortening for frying
  • 40 corn tortillas
  • 80 ounces [2.5 L] salsa sauce
  • 10 fresh coriander sprigs, chopped
  • 40 fried eggs
  • Fry tortillas until light.
  • Drain and arrange on a warm plate.
  • Slowly heat salsa sauce; add chopped coriander.
  • Place 1 fried egg over each tortilla.
  • Pour 1 ounce [15 mL] sauce over each egg.
  • Serve hot.
