- Shortening for frying
- 40 corn tortillas
- 80 ounces [2.5 L] salsa sauce
- 10 fresh coriander sprigs, chopped
- 40 fried eggs

- Fry tortillas until light.
- Drain and arrange on a warm plate.
- Slowly heat salsa sauce; add chopped coriander.
- Place 1 fried egg over each tortilla.
- Pour 1 ounce [15 mL] sauce over each egg.
- Serve hot.
