Hidden Eggs

  • 1 1/2 pounds [680 g] ground beef
  • 3 slices white bread, dampened with just a little water
  • 2 onions, minced
  • 1 teaspoon [5 mL] salt
  • 1/2 teaspoon [2.5 mL] pepper
  • 1 teaspoon [5 mL] paprika
  • 2 tablespoon [30 mL] freshly chopped parsley
  • 4 eggs
  • 4 tablespoons [60 g] butter
  • 2 tablespoons [30 mL] oil
  • Chopped parsley
  • Boiled noodles
  • Boiled green peas
  • Boiled carrot strips
  • Mix together ground beef and dampened bread slices.
  • Well mix in minced onions, salt, pepper, paprika and chopped parsley; reserve.
  • Boil eggs into hot boiling water for 12 minutes; cool.
  • Shell cooled eggs; arrange into a deep dish.
  • Completely coat each egg with ground beef mixture.
  • Heat together butter and oil; cook coated eggs for 5 minutes on each side.
  • Serve, sprinkled with chopped parsley, along with boiled noodles, green peas and carrot strips.
