Omelet with Salsa

  • 1/4 cup [60 g/mL] butter or vegetable oil
  • 3 eggs
  • 1 pinch salt
  • 1 pinch pepper
  • 1/2 small jar salsa
  • 1 small pack grated Cheddar cheese
  • Heat butter or vegetable oil into a non-stick frypan.
  • Meanwhile, whip together eggs, salt and pepper.
  • Pour beaten eggs into frypan; beat lightly until mixture starts to set.
  • Shake frypan to evenly spread mixture.
  • Spoon half of salsa over the center of almost set eggs.
  • Sprinkle all over with grated cheese.
  • Using a spatula, fold omelet in half.
  • Remove from heat and set aside until eggs are completely set, salsa is hot and cheese has melted.
