- 1 pound [454 g] mild sausage meat
- 6 eggs
- 2 cups [500 mL] milk
- 1 teaspoon [5 mL] salt
- 1 teaspoon [5 mL] dry mustard
- 6 slices white bread, cubed
- 1 cup [225 g] grated Cheddar cheese

- Break-up sausage meat stirring until well done; drain and leave to cool.
- Beat eggs into a large bowl.
- Stir in milk, salt and dry mustard.
- Then stir in bread cubes.
- Well mix in grated Cheddar cheese and cooled sausage meat.
- Refrigerate overnight.
- When ready to bake souffle, preheat oven to 350°F [180°C].
- Pour mixture into a 13 x 9-inch [33 x 23-cm] souffle dish.
- Bake into preheated oven for 45 minutes.
- Serve immediately.
