Sausage Souffle
Comments: Mixture must be prepared the day before.

  • 1 pound [454 g] mild sausage meat
  • 6 eggs
  • 2 cups [500 mL] milk
  • 1 teaspoon [5 mL] salt
  • 1 teaspoon [5 mL] dry mustard
  • 6 slices white bread, cubed
  • 1 cup [225 g] grated Cheddar cheese
  • Break-up sausage meat stirring until well done; drain and leave to cool.
  • Beat eggs into a large bowl.
  • Stir in milk, salt and dry mustard.
  • Then stir in bread cubes.
  • Well mix in grated Cheddar cheese and cooled sausage meat.
  • Refrigerate overnight.
  • When ready to bake souffle, preheat oven to 350°F [180°C].
  • Pour mixture into a 13 x 9-inch [33 x 23-cm] souffle dish.
  • Bake into preheated oven for 45 minutes.
  • Serve immediately.
