Chinese-Style Egg Patties

  • 3 eggs
  • 1 cup [250 mL] bean sprouts
  • 1/2 cup [125 mL] cooked crumbled ground pork
  • 2 tablespoons [30 mL] chopped onion
  • 1 tablespoon [15 mL] soy sauce
  • 2 tablespoons [30 mL] peanut oil
  • Beat eggs until thick.
  • Mix in bean sprouts, cooked ground pork crumbs, chopped onion and soy sauce.
  • Heat peanut oil into a frypan.
  • Pour in a little egg mixture at a time, tossing eggs with a spatula as soon as they cool onto ground pork, shaping patties.
  • Turn golden patties over; brown on other side.
  • Serve immediately, coated with sauce.
