Hot Green Pepper Egg Squares

  • 2 [4-ounce / 113-mL each] cans hot green pepper, drained then chopped
  • 4 cups [900 g] grated Cheddar cheese
  • 2 cups [500 mL] milk
  • 1 cup [250 mL] buttermilk baking powder biscuit mix
  • 6 eggs
  • Preheat oven to 350°F [180°C].
  • Grease a rectangular 9 x 13-inch [23 x 33-cm] baking dish.
  • Evenly sprinkle chopped green peppers all over bottom of dish; sprinkle with grated Cheddar cheese.
  • Into a bowl, beat together milk, buttermilk baking powder biscuit mix and eggs until light.
  • Evenly pour mixture into prepared baking dish, over grated Cheddar cheese.
  • Bake mixture into preheated oven for 30 minutes, until the blade of knife comes out clean from its centre.
  • Cut mixture into squares and serve, hot.
