- 16 ounces [454 g] cottage cheese [skimmed if desired]
- 3 eggs, well beaten
- 1/4 cup [60 g] hard margarine [less if desired]
- 4 ounces [113 g] Cheddar cheese [less if desired]
- 1o ounces [284 g] frozen chopped spinach, thawed then well drained
- 3 tablespoons [26,25 g] flour
- 1/4 cup [60 g] grated Parmesan cheese

- Preheat oven to 350°F [180°C].
- Into a large bowl, well mix well beaten eggs into cottage cheese.
- Cut margarine and Cheddar cheese into tiny pieces; add to eggs mixture.
- Mix well.
- Then well mix in drained chopped spinach and flour.
- Pour mixture into a greased 6-cup [1.5-mL] souffle dish.
- Sprinkle mixture all over with grated Parmesant cheese.
- Bake into preheated oven, for 1 hour.
- Serve immediately.
