Easy Spinach Souffle

  • 16 ounces [454 g] cottage cheese [skimmed if desired]
  • 3 eggs, well beaten
  • 1/4 cup [60 g] hard margarine [less if desired]
  • 4 ounces [113 g] Cheddar cheese [less if desired]
  • 1o ounces [284 g] frozen chopped spinach, thawed then well drained
  • 3 tablespoons [26,25 g] flour
  • 1/4 cup [60 g] grated Parmesan cheese
  • Preheat oven to 350°F [180°C].
  • Into a large bowl, well mix well beaten eggs into cottage cheese.
  • Cut margarine and Cheddar cheese into tiny pieces; add to eggs mixture.
  • Mix well.
  • Then well mix in drained chopped spinach and flour.
  • Pour mixture into a greased 6-cup [1.5-mL] souffle dish.
  • Sprinkle mixture all over with grated Parmesant cheese.
  • Bake into preheated oven, for 1 hour.
  • Serve immediately.
