Fresh Mushroom Sweet Pepper Omelet

  • 12 freshly cleaned mushrooms, minced
  • 1/2 sweet green or red pepper, membranes removed and seeded, into fine strips
  • 8 really fresh eggs
  • 1/4 cup [60 mL] milk
  • Butter
  • 3 small green onions, minced
  • Salt and pepper, to taste
  • Soften together minced mushrooms and sweet green or red pepper strips for a few seconds into a microwave oven.
  • Meanwhile, beat together eggs and milk.
  • Melt a little butter into a frypan before pouring in beaten eggs.
  • Evenly top eggs with mushrooms and sweet pepper mixture.
  • Salt and pepper to taste.
  • As soon as bottom of omelet is set, fold each side of omelet towards the center.
  • Flip folded omelet over; cook until done yet not completely set, before serving.
  • Omelet should be soft.
