- 12 freshly cleaned mushrooms, minced
- 1/2 sweet green or red pepper, membranes removed and seeded, into fine strips
- 8 really fresh eggs
- 1/4 cup [60 mL] milk
- Butter
- 3 small green onions, minced
- Salt and pepper, to taste

- Soften together minced mushrooms and sweet green or red pepper strips for a few seconds into a microwave oven.
- Meanwhile, beat together eggs and milk.
- Melt a little butter into a frypan before pouring in beaten eggs.
- Evenly top eggs with mushrooms and sweet pepper mixture.
- Salt and pepper to taste.
- As soon as bottom of omelet is set, fold each side of omelet towards the center.
- Flip folded omelet over; cook until done yet not completely set, before serving.
- Omelet should be soft.
