- 2 slices of bread
- Approximately 4 cups [1 L] water
- A little vinegar
- 1 pinch salt
- 2 large eggs
- Grated Mozzarella cheese, to taste [optional]
- Pepper, to taste

- Toast bread slices.
- Bring together water, vinegar and salt to a boil; lower heat to simmer.
- Break-up eggs, one at a time, into a cup; delicately, pour each egg into boiling water without any hesitation.
- Leave eggs to poach for 3 minutes.
- Using a slotted spoon to well drip the eggs, transfer one egg onto each toast.
- If desired, sprinkle eggs with a little grated Mozzarella cheese.
- Pepper, and enjoy.
