Papi's Poached Eggs

  • 2 slices of bread
  • Approximately 4 cups [1 L] water
  • A little vinegar
  • 1 pinch salt
  • 2 large eggs
  • Grated Mozzarella cheese, to taste [optional]
  • Pepper, to taste
  • Toast bread slices.
  • Bring together water, vinegar and salt to a boil; lower heat to simmer.
  • Break-up eggs, one at a time, into a cup; delicately, pour each egg into boiling water without any hesitation.
  • Leave eggs to poach for 3 minutes.
  • Using a slotted spoon to well drip the eggs, transfer one egg onto each toast.
  • If desired, sprinkle eggs with a little grated Mozzarella cheese.
  • Pepper, and enjoy.
