Chile Egg Puff [Dutch Oven]

  • 10 eggs
  • 1/2 cup [70 g] flour
  • 1 teaspoon [5 mL] baking powder
  • 1/2 teaspoon [2.5 mL] salt
  • 2 cups [500 mL] cottage cheese
  • 1 pound [454 g] shredded Monterey Jack cheese
  • 1/2 cup [115 g] melted butter
  • 2 [4-ounce / 114-mL each] cans green chile dices, drained
  • Preheat oven to 350°F [180°C]; grease Dutch oven.
  • Beat eggs until light.
  • Sift together flour, baking powder and salt before adding to beaten eggs.
  • Add cottage cheese, shredded Monterey Jack cheese and melted butter.
  • Stir in drained green chile dices.
  • Pour into greased Dutch oven.
  • Bake into preheated oven for 35 to 45 minutes, until the top is golden brown and center is firm.
