Although eggs, carrots and fresh shrimps are usually part of this dish, any other desired ingredients such as green peas or crabmeat can also be added.
If cooked shrimps are used, they must be mixed in at the end off cooking, making sure that they are well mixed into the omelet, ane really hot.
Over-cooked shrimps would be soft and loose their taste.

- 2 tablespoons [30 mL] vegetable oil
- 1 carrot, grated
- 5 eggs, beaten
- 8 ounces [227 g] small fresh shelled and deveined shrimps
- 1 tablespoon [15 mL] light soy sauce
- 1 pinch Chinese 5-spice powder
- 2 green onions, chopped
- 2 teaspoons [10 mL] sesame seeds
- 1 teaspoon [5 mL] sesame oil

- Heat vegetable oil into a preheated wok or frypan, stirring until really hot.
- Stur-fry grated carrot for 1 to 2 minutes.
- Push fried grated carrot all around the outside of the wok or the frypan before pouring beaten eggs in the middle.
- Stirring, cook eggs for 1 to 2 minutes.
- Then stir in cleaned shrimps, soy sauce and Chinese 5-spice powder.
- Stir-fry mixture for 2 to 3 minutes, until shrimps become pink and mixture almost dry.
- Transfer omelet onto a warm serving plate.
- Serve omelet immediately, sprinkled with chopped green onions, sesame seeds and sesame oil.
