- 4 large or 6 small eggs
- 3 cups [750 mL] large pieces zucchini
- 1 onion, into large pieces
- 1 1/2 cups [375 mL] bisquik mix or flour [210 g]
- 1/2 cup [125 mL] olive or vegetable oil
- 1/2 cup [115 g] grated Parseman cheese
- 1/2 teaspoon [2.5 mL] freshly chopped or dried basil
- 1/4 cup [60 mL] freshly chopped parsley
- 1/4 teaspoon [1 mL] salt
- 1/4 teaspoon [1 mL] pepper
- 1 clove garlic, finely chopped
- Cooked ham dices, to taste
- Butter, for the pan

- Preheat oven to 350°F [180°C].
- Beat eggs then well mix in all remaining ingredients except butter.
- Pour into a buttered glass bread pan.
- Bake frittata into preheated oven for 30 minutes, before serving.
