Italian-Style Omelet [Frittata]

  • 4 large or 6 small eggs
  • 3 cups [750 mL] large pieces zucchini
  • 1 onion, into large pieces
  • 1 1/2 cups [375 mL] bisquik mix or flour [210 g]
  • 1/2 cup [125 mL] olive or vegetable oil
  • 1/2 cup [115 g] grated Parseman cheese
  • 1/2 teaspoon [2.5 mL] freshly chopped or dried basil
  • 1/4 cup [60 mL] freshly chopped parsley
  • 1/4 teaspoon [1 mL] salt
  • 1/4 teaspoon [1 mL] pepper
  • 1 clove garlic, finely chopped
  • Cooked ham dices, to taste
  • Butter, for the pan
  • Preheat oven to 350°F [180°C].
  • Beat eggs then well mix in all remaining ingredients except butter.
  • Pour into a buttered glass bread pan.
  • Bake frittata into preheated oven for 30 minutes, before serving.
