Maple Syrup Fondue

  • 1/2 cup [125 mL] maple syrup
  • 2 cups [500 mL] heavy cream [35%m.s.g.]
  • 4 tablespoons [60 mL] cornstarch
  • 1 egg yolk
  • Assorted fruits bites
  • Angle food cake bites
  • Heat maple syrup for 10 minutes.
  • Mix together cornstarch and a little cream, until smooth; reserve.
  • Heat remaining cream just to a boil [do not boil].
  • Mix hot cream into hot maple syrup.
  • Away from heat, beat in reserved cornstarch mixture and egg yolk.
  • Heat until thickened.
  • Serve into a small [chocolate] fondue pot, over a candle, along with fruits and angel food cake bites.
