- 1/2 cup [125 mL] maple syrup
- 2 cups [500 mL] heavy cream [35%m.s.g.]
- 4 tablespoons [60 mL] cornstarch
- 1 egg yolk
- Assorted fruits bites
- Angle food cake bites

- Heat maple syrup for 10 minutes.
- Mix together cornstarch and a little cream, until smooth; reserve.
- Heat remaining cream just to a boil [do not boil].
- Mix hot cream into hot maple syrup.
- Away from heat, beat in reserved cornstarch mixture and egg yolk.
- Heat until thickened.
- Serve into a small [chocolate] fondue pot, over a candle, along with fruits and angel food cake bites.
