Canadian Moose Fondue

Comments: Canadian moose is also called caribou or reindeer.
Serve along with desired fondue sauces.

IngredientsPreparation
  • 2 pounds [1 kg] half-frozen Canadian moose round
Broth
  • 3 tablespoons [45 g] butter
  • 1 cup [250 mL] chopped onion
  • 3 1/2 ounces [110 mL] white wine
  • 4 cups [1 L] beef consomme
  • Paper thin slice moose meat.
  • Reserve.
  • Prepare broth; pour broth into a fondue pot.
  • Serve moose meat slices along with hot broth, for everyone to cook in meat slices.
Broth
  • Melt butter over medium-high heat; lightly color onion.
  • Pour in white wine.
  • Bring to a boil; leave to reduce to 2/3rds.
  • Pour in beef consomme.
  • Simmer for a few minutes.
