Easy Mushroom Sauce

  • 1/2 pound [227 g] fresh mushrooms
  • 3 tablespoons [45 mL] oil
  • 2 cloves garlic
  • 1 cup [250 mL] tomato juice
  • 1 cup [250 mL] mayonnaise
  • Salt and pepper, to taste
  • Wash and finely mince mushrooms; brown into hot oil, until mushroom water has evaporated completely.
  • Add crushed garlic and tomato juice; boil to reduce, until thick.
  • Refrigerate until cold; then stir in mayonnaise, salt and pepper.
  • Serve cold.
