- 1/2 pound [227 g] fresh mushrooms
- 3 tablespoons [45 mL] oil
- 2 cloves garlic
- 1 cup [250 mL] tomato juice
- 1 cup [250 mL] mayonnaise
- Salt and pepper, to taste

- Wash and finely mince mushrooms; brown into hot oil, until mushroom water has evaporated completely.
- Add crushed garlic and tomato juice; boil to reduce, until thick.
- Refrigerate until cold; then stir in mayonnaise, salt and pepper.
- Serve cold.
