Chinese Fondue Broth

  • 3 tablespoons [45 g] butter
  • 2 small onions, chopped
  • 2 cloves garlic, minced
  • 1/4 teaspoon [1 mL] oregano
  • 1/4 teaspoon [1 mL] oregan
  • 1/4 teaspoon [1 mL] thyme
  • 1/4 teaspoon [1 mL] celery salt
  • 1/4 teaspoon [1 mL] mixed spices
  • 1/4 teaspoon [1 mL] salt
  • 1/4 teaspoon [1 mL] pepper
  • 2 bay leaves
  • 1 [10-ounce / 284-mL] can beef consomme concentrate
  • 3/4 cup [190 mL] dry red wine
  • Lightly brown chopped onions and minced garlic into hot melted butter.
  • Mix in oregano, thyme, celery salt, mixed spices, salt, pepper, bay leaves and beff consomme concentrate.
  • Boil for 30 minutes.
  • Near the end, stir in dry red wine.
