- 1 cup [200 g] sugar
- 1/4 cup [60 mL] water
- 4 tablespoons [60 g] butter
- 2 tablespoons [30 g] 'mascarpone' cheese, heaping spoons

- Sprinkle sugar into a casserole.
- Pour in water soaking sugar well.
- Leave sugar to dissolve over low heat without stirring, then leave to boil slowly for 3 minutes.
- Caramel will start to form all around the casserole.
- Stir to well mix while cooking until of a nice amber color; remove from heat.
- Watch out, a few seconds too long and caramel will burn.
- Stir in butter.
- Caramel will harden into a few places but do not worry.
- Pour in 'mascarpone' cheese and mix well
- Pour back into casserole to dissolve any remaining crystals, and serve.
