Cheesy Caramel Fondue

Comments: Serve this fondue along with dried or fresh fruit, soft cookie, chocolate or any other pieces that would be good with caramel and that are possible to hold with a long fork.
Servings: 6 to 8
IngredientsPreparation
  • 1 cup [200 g] sugar
  • 1/4 cup [60 mL] water
  • 4 tablespoons [60 g] butter
  • 2 tablespoons [30 g] 'mascarpone' cheese, heaping spoons
  • Sprinkle sugar into a casserole.
  • Pour in water soaking sugar well.
  • Leave sugar to dissolve over low heat without stirring, then leave to boil slowly for 3 minutes.
  • Caramel will start to form all around the casserole.
  • Stir to well mix while cooking until of a nice amber color; remove from heat.
  • Watch out, a few seconds too long and caramel will burn.
  • Stir in butter.
  • Caramel will harden into a few places but do not worry.
  • Pour in 'mascarpone' cheese and mix well
  • Pour back into casserole to dissolve any remaining crystals, and serve.
