Cheddar Cheese Cider White Wine Fondue

Servings: 2 cups [500 mL]
IngredientsPreparation
  • 1/2 cup [125 mL] good cider
  • 1/2 cup [125 mL] dry white wine
  • 2 tablespoons [30 mL] lemon juice
  • 1 pound [454 g] grossly grated smoked Cheddar cheese [6 cups / 1.5 L]
  • 4 teaspoons [20 mL] cornstarch
  • 1/4 teaspoon [1 mL] ground nutmeg
  • 1/4 teaspoon [1 mL] freshly ground pepper
  • Into a medium casserole, heat together cider, dry white wine and lemon juice until just boiling.
  • Transfer grossly grated smoked Cheddar cheese and cornstaach into platic bag; shake until cheese is evenly coated with cornstarch.
  • Add to hot liquid, one handful at a time, whiping until completely melted after each addition.
  • Stir in ground nutmeg and freshly ground pepper.
  • Pour into a ceramic fondue pot; transfer over burner on the table.
  • Stir mixture from time to time during the meal.
