Cheddar Cheese Cider White Wine Fondue

A real delight!
Serve this fondu along with tiny potato pieces, pear pieces, bread cubes, sausage piecess.....

| Ingredients | Preparation |
- 1/2 cup [125 mL] good cider
- 1/2 cup [125 mL] dry white wine
- 2 tablespoons [30 mL] lemon juice
- 1 pound [454 g] grossly grated smoked Cheddar cheese [6 cups / 1.5 L]
- 4 teaspoons [20 mL] cornstarch
- 1/4 teaspoon [1 mL] ground nutmeg
- 1/4 teaspoon [1 mL] freshly ground pepper

- Into a medium casserole, heat together cider, dry white wine and lemon juice until just boiling.
- Transfer grossly grated smoked Cheddar cheese and cornstaach into platic bag; shake until cheese is evenly coated with cornstarch.
- Add to hot liquid, one handful at a time, whiping until completely melted after each addition.
- Stir in ground nutmeg and freshly ground pepper.
- Pour into a ceramic fondue pot; transfer over burner on the table.
- Stir mixture from time to time during the meal.
