Caribou Roast

Comments: Using this recipe, you can also use less tender meat, marinated.
  • 4 tablespoons [60 g] softened butter
  • 1 teaspoon [5 mL] dry mustard
  • 1 tablespoon [8.75 g] flour
  • Salt and pepper, to taste
  • 1 [5 1/2-pound / 2.5-kg] caribou roast
  • 1 large onion, cut into thick slices
  • 1 1/2 cups [375 mL] water
  • Mix together softened butter, dry mustard, flour, salt and pepper.
  • Coat meat with mixture.
  • Arrange roast and onion slices into a roasting pan; pour in water.
  • Roast for 20 minutes into a preheated 450°F [232°C] oven.
  • Lower oven temperature to 350°F [180°C]; roast for 2 hours more.
