- 4 tablespoons [60 g] softened butter
- 1 teaspoon [5 mL] dry mustard
- 1 tablespoon [8.75 g] flour
- Salt and pepper, to taste
- 1 [5 1/2-pound / 2.5-kg] caribou roast
- 1 large onion, cut into thick slices
- 1 1/2 cups [375 mL] water

- Mix together softened butter, dry mustard, flour, salt and pepper.
- Coat meat with mixture.
- Arrange roast and onion slices into a roasting pan; pour in water.
- Roast for 20 minutes into a preheated 450°F [232°C] oven.
- Lower oven temperature to 350°F [180°C]; roast for 2 hours more.
