Partridges with Cabbage

  • 2 partridges
  • 6 thin salt pork or bacon slices
  • 4 tablespoons [60 g] butter
  • 2 small cabbages, quartered
  • 1 large onion, quartered
  • Salt and pepper
  • Hot water
  • Arrange salt pork or bacon slices over partridges.
  • Into a large casserole, brown partridges on all sides, for 10 minutes.
  • Add cabbage and onion; salt and pepper, to taste.
  • Completely cover with hot water.
  • Bake into a preheated 300°F [150°C] oven for 2 hours, basting often.
