- 2 partridges
- 6 thin salt pork or bacon slices
- 4 tablespoons [60 g] butter
- 2 small cabbages, quartered
- 1 large onion, quartered
- Salt and pepper
- Hot water

- Arrange salt pork or bacon slices over partridges.
- Into a large casserole, brown partridges on all sides, for 10 minutes.
- Add cabbage and onion; salt and pepper, to taste.
- Completely cover with hot water.
- Bake into a preheated 300°F [150°C] oven for 2 hours, basting often.
