- 2 pounds [1 kg] bear meat, cut into 1-inch [2.5-cm] cubes
- 1/2 cup [115 g] butter
- 1 onion, chopped
- 1 sweet green pepper, memranes removed and seeded, chopped
- 2 cloves garlic, crushed
- 1/2 cup [125 mL] chopped celery
- 1 [5 1/2-ounce / 156-mL] can tomato paste
- 1 cup [250 mL] peeled, chopped tomatoes
- 1 drop Tabasco sauce
- Salt and pepper, to taste
Marinade
- 2 cups [500 mL] water
- 1/4 cup [60 mL] vinegar
- 1 teaspoon [5 mL] salt

- Into a bowl, thoroughly mix together all marinade ingredients [water, vinegar and salt].
- Add meat cubes.
- Leave to macerate for 30 minutes; drain and well wipe dry meat cubes.
- Melt butter into a microwave-safe roasting pan for 7 minutes on 'HIGH' [100%].
- Brown meat cubes into hot butter.
- Mix in choped onion and sweet green pepper, crushed garlid, chopped celery, tomato paste, chopped tomatoes and Tabasco sauce.
- Salt and pepper.
- Cover and microwave for 5 minutes more, 'HIGH'.
- Stir, cover and microwave on 'MEDIUM' [50%] for 30 to 40 minutes, until meat is tender.
- Leave to rest for 10 minutes before serving.
