- 5 pounds [2.27 kg] Canadian moose loin roast
- 1/4 pound [113 g] salt pork slices
- 1 tablespoon [15 mL] paprika
- 10 cloves
- 10 juniper berries
- 1/2 cup [125 mL] oil
- 2 teaspoons [10 mL] salt
- 1 cup [250 mL] broth
- 1 cup [250 mL] apple juice
- 1/4 cup [60 mL] cranberry sauce
- 1 teaspoon [5 mL] pepper
- 1 tablespoon [8.75 g] flour
- 1 tablespoon [15 mL] cornstarch
- 1/4 cup [60 mL] cold water

- Cover roast with salt pork slices.
- Arrange roast into a roasting pan.
- Sprinkle roast all over with paprika; prick with cloves and top with juniper berries.
- Sprinkle roast all over with oil.
- Roast moose into a preheated 400°F [200°C] oven for 15 to 20 minutes per pound [454 g].
- Sprinkle with salt and broth while roasting.
- Remove meat from roasting pan; reserve warm.
- Pour apple juice into roasting pan; mix in cranberry sauce, pepper, flour and cornstarch, already mixed with cold water.
- Boil sauce for 3 minutes.
- Strain sauce.
- Slice and serve roast slices, coated with sauce.
