Canadian Moose Roast

  • 5 pounds [2.27 kg] Canadian moose loin roast
  • 1/4 pound [113 g] salt pork slices
  • 1 tablespoon [15 mL] paprika
  • 10 cloves
  • 10 juniper berries
  • 1/2 cup [125 mL] oil
  • 2 teaspoons [10 mL] salt
  • 1 cup [250 mL] broth
  • 1 cup [250 mL] apple juice
  • 1/4 cup [60 mL] cranberry sauce
  • 1 teaspoon [5 mL] pepper
  • 1 tablespoon [8.75 g] flour
  • 1 tablespoon [15 mL] cornstarch
  • 1/4 cup [60 mL] cold water
  • Cover roast with salt pork slices.
  • Arrange roast into a roasting pan.
  • Sprinkle roast all over with paprika; prick with cloves and top with juniper berries.
  • Sprinkle roast all over with oil.
  • Roast moose into a preheated 400°F [200°C] oven for 15 to 20 minutes per pound [454 g].
  • Sprinkle with salt and broth while roasting.
  • Remove meat from roasting pan; reserve warm.
  • Pour apple juice into roasting pan; mix in cranberry sauce, pepper, flour and cornstarch, already mixed with cold water.
  • Boil sauce for 3 minutes.
  • Strain sauce.
  • Slice and serve roast slices, coated with sauce.
