Creamy Ground Moose Meatballs

Comments: Serve over buttered noodles.
  • 12 1/3 ounces [350 g] ground moose
  • 4 ounces [113 g] ground pork
  • 1/4 cup [60 mL] breadcrumbs
  • 1 beaten egg
  • 1 teaspoon [5 mL] salt
  • 1/2 teaspoon [2.5 mL] allspice
  • 1/4 teaspoon [1 mL] nutmeg
  • 1/4 teaspoon [1 mL] pepper
  • 2 tablespoons [30 g] butter
  • Beef broth [optional]
Sauce
  • 1 can cream of mushroom soup concentrate
  • 2 tablespoons [30 mL] finely chopped celery
  • 2 tablespoons [30 mL] finely chopped onion
  • 1 tablespoon [15 mL] lemon juice
  • Salt and pepper, to taste
  • Well mix together ground moose, ground pork, breadcrumbs, beaten egg, salt, allspice, nutmeg and pepper.
  • Shape into meatballs.
  • Brown meatballs into melted butter, until dark golden brown.
  • Prepare sauce; pour hot sauce over meatballs.
  • Pour over meatballs.
  • Cover and cook, over very low heat, for 1 1/2 hours.
  • While cooking, if needed, pour in a little beef broth.
Sauce
  • Mix together cream of mushroom soup concentrate, chopped celery and onion, lemon juice, salt and pepper.
  • Heat sauce over low heat, stirring until hot.
