- 3 tablespoons [45 mL] shortening
- 3 1/4 pounds [1.5 kg] roasting moose meat
- 3 cups [750 mL] hot beef broth
- 2 tablespoons [30 mL] lemon juice
- 3 tablespoons [45 mL] minced onion
- Salt and pepper, to taste

- Into a large casserole, melt shortening over medium heat; brown moose roast on all sides.
- Salt and pepper.
- Pour in hot beef broth and lemon juice.
- Sprinkle with minced onion.
- Bring to a boil; cover.
- Transfer into a preheated 350° [180°C] oven for 2 hours.
- Turn and sprinkle meat with cooking juices from time to time while roasting.
