Canadian Moose Roast with Sauce

Comments: Canadian moose is also called caribou or reindeer.

  • 3 tablespoons [45 mL] shortening
  • 3 1/4 pounds [1.5 kg] roasting moose meat
  • 3 cups [750 mL] hot beef broth
  • 2 tablespoons [30 mL] lemon juice
  • 3 tablespoons [45 mL] minced onion
  • Salt and pepper, to taste
  • Into a large casserole, melt shortening over medium heat; brown moose roast on all sides.
  • Salt and pepper.
  • Pour in hot beef broth and lemon juice.
  • Sprinkle with minced onion.
  • Bring to a boil; cover.
  • Transfer into a preheated 350° [180°C] oven for 2 hours.
  • Turn and sprinkle meat with cooking juices from time to time while roasting.
