- 2 pounds [1 kg] half-frozen Canadian moose round
Broth
- 3 tablespoons [45 g] butter
- 1 cup [250 mL] chopped onion
- 3 1/2 ounces [100 mL] white wine
- 4 cups [1 L] beef consomme

- Paper thin slice moose meat.
- Reserve.
- Prepare broth; pour broth into a fondue pot.
- Serve moose meat slices along with hot broth, for everyone to cook meat slices.
Broth
- Melt butter over medium-high heat; lightly color onion.
- Pour in white wine.
- Bring to a boil; reduce to 2/3rds.
- Pour in beef consomme.
- Simmer for a few minutes.
