- 1/2 cup [115 g] margarine
- 3/4 cup [105 g] flour
- 20 ounces [625 mL] milk
- 3/4 cup [190 mL] cornstarch
- 4 ounces [113 g] grated Parmesan cheese
- 4 ounces [113 g] grated medium Cheddar cheese or Mozzarella cheese
- Oil for frying
Coating
- Flour
- 1 egg
- 1 tablespoon [15 mL] water
- Italian breadcrumbs

- Melt margarine; stir in flour.
- Blend in 16 ounces [500 mL] milk.
- Mix together corntarch with remaining milk.
- Pour into flour mixture, stirring until smooth.
- Stir in grated Parmesan cheese and Cheddar or Mozzarella cheese.
- Cook for a few minutes.
- Pour into a square pan; cool.
- Refrigerate for 1 to 2 hours, until set.
- Cut into squares.
- Coat each square with flour.
- Beat together egg and water; dip in cheese squares.
- Coat squares with breadcrumbs.
- Deep-fry squares into preheated 350°F [180°C] oil, until golden brown.
