Parmesan and Cheddar or Mozzarella Cheese Squares

Comments: Keep frozen.
Also called 'Fondues Parmesan'.
  • 1/2 cup [115 g] margarine
  • 3/4 cup [105 g] flour
  • 20 ounces [625 mL] milk
  • 3/4 cup [190 mL] cornstarch
  • 4 ounces [113 g] grated Parmesan cheese
  • 4 ounces [113 g] grated medium Cheddar cheese or Mozzarella cheese
  • Oil for frying
Coating
  • Flour
  • 1 egg
  • 1 tablespoon [15 mL] water
  • Italian breadcrumbs
  • Melt margarine; stir in flour.
  • Blend in 16 ounces [500 mL] milk.
  • Mix together corntarch with remaining milk.
  • Pour into flour mixture, stirring until smooth.
  • Stir in grated Parmesan cheese and Cheddar or Mozzarella cheese.
  • Cook for a few minutes.
  • Pour into a square pan; cool.
  • Refrigerate for 1 to 2 hours, until set.
  • Cut into squares.
  • Coat each square with flour.
  • Beat together egg and water; dip in cheese squares.
  • Coat squares with breadcrumbs.
  • Deep-fry squares into preheated 350°F [180°C] oil, until golden brown.
