Parmesan and Mozzarella Cheese Squares

  • 6 tablespoons [90 g] margarine or butter
  • 8 tablespoons [120 mL] cornstarch
  • 2 cups [500 mL] milk
  • 1 teaspoon [5 mL] salt
  • 3/4 cup [175 g] grated Parmesan cheese
  • 1/4 cup [60 g] grated Mozzarella cheese
  • 2 beaten eggs
  • Breadcrumbs
  • Melt margarine or butter over low heat.
  • Well mix in cornstarch.
  • Add milk, salt, grated Parmesan cheese, grated Mozzarella cheese and beaten eggs; stir until thick.
  • Take away from heat; pour into a greased square pan.
  • Refrigerate for 2 hours.
  • Cut into squares.
  • Dip each square into beaten eggs, then into breadcrumbs; repeat both operations once.
  • Deep-fry squares into hot, 350°F [180°C] oil, until golden brown.
