Melanzanas all'italiano [Italian-Style Eggplant]

Serve approximately 4 slices per person.
Servings: Approximately 30 slices
  • 2 eggplants
  • Mixed dried herbs or basil
  • Garlic powder
  • Pepper
  • 1 or 2 beaten eggs
  • Grated Parmesan cheese
  • Olive oil
  • 2 large Italian sausages
  • Tomato sauce
  • Pitted black olives
  • Grated Mozzarella cheese
  • Slice eggplants; sprinkle slices to taste with mixed herbs or dry basil, garlic powder and pepper.
  • Dip slices into beaten egg[s], then into grated Parmesan cheese.
  • Brown slices into hot olive oil until golden; wrap each slice into paper toweling to remove excess oil.
  • Meanwhile, slice Italian sausages into 1-inch [2.5-cm] thick slices.
  • Bake into a preheated 350°F [180°C] oven, for approximately 20 minutes.
  • Then cook sausage slices into tomato sauce, until done.
  • Arrange eggplants slices onto a cookie sheet.
  • Top each slice with a slice Italian sausage, cover with tomato sauce and top with 1 black olive.
  • Sprinkle all over with grated Mozzarella cheese.
  • Broil until golden; serve.
