Cucumber, Smoked Salmon and Caviar

  • 1 large cucumber
  • 5 ounces [142 g] smoked salmon
  • 1 1/2 ounces [42.5 g] salmon eggs [red caviar]
  • Chives
  • Freshly ground pepper
  • Slice cucumber lengthwise, into 1/4-inch [6-mm] slices.
  • Cut slices into 1-inch [2.5-cm] diamonds.
  • Really finely mince smoked salmon; spread over cucumber diamonds.
  • Sprinkle with pepper; top with red caviar.
  • Decorate with chives and sprinkle with more pepper.
  • Refrigerate.
