- 1 large cucumber
- 5 ounces [142 g] smoked salmon
- 1 1/2 ounces [42.5 g] salmon eggs [red caviar]
- Chives
- Freshly ground pepper

- Slice cucumber lengthwise, into 1/4-inch [6-mm] slices.
- Cut slices into 1-inch [2.5-cm] diamonds.
- Really finely mince smoked salmon; spread over cucumber diamonds.
- Sprinkle with pepper; top with red caviar.
- Decorate with chives and sprinkle with more pepper.
- Refrigerate.
